Reality check!

Mardi Gras is over.
And i missed it!!!

Yes, it's true, i had what could be described as "Better Things To Do"…

such as songs to sing at Bangle Manor. But still…

MARDI GRAS!!

Okay, i'm over it. Sort of. i did find myself on the phone the weekend before Mardi Gras trying to give long distance instructions on how to make the annual ceremonial Mardi Gras sandwiches that Susan Cowsill and i make for a day of parade watching. i thought that this might make a nice informal March recipe for Banglers, especially for those of you who did not make it down to New Orleans to have a proper Mardi Gras. You simply have to come up with some other reason for packing a picnic basket and heading out with friends to enjoy the sun…

PSYCHO SISTERS' MARDI GRAS SANDWICHES

 

(Note: The amounts given may be adjusted to taste. That's recipe jargon for "i'm faking this…")1 French baguette or sandwich rolls1 bulb roasted garlic2 red peppers, roasted and julienned ¾ cup mayonnaise, small round brie cheese, softened2 tbsp fresh basil, chopped, freshly ground black pepper To roast garlic: Take whole bulb of garlic and cut across top to expose cloves. Drizzle with olive oil and wrap in foil. Bake in 300 degree oven until soft, about 45 minutes. Cool. To roast peppers: Place whole peppers in pie plate or on foil under broiler. Broil until skin is blistered and black, turning peppers occasionally to roast evenly. Remove from oven and place in brown paper bag, rolling down the top to close. Set aside and let cool. When peppers are cool enough to handle, remove them from the bag. Peel the charred skins off of the peppers (they should slip right off) and cut peppers in half, removing seeds and tough spines. Slice peppers into small strips. To assemble sandwiches: Slice French baguette or rolls in half lengthwise. Squeeze each clove of roasted garlic into the mayonnaise and blend well. Spread garlic mayo onto one side of bread. Scoop out the softened brie from the rind and spread on the other side of the bread. Top with strips of roasted pepper and chopped basil. Season with pepper and put sides of bread together, pressing lightly. Cut baguette into 6-inch pieces and serve.*Good picnic fare! Wrap sandwiches tightly in plastic wrap and refrigerate until you're ready to go...*

i suppose that while we're traveling backwards in time, we might as well go all the way back to the first hours of the New Year…Who was in Las Vegas with us? Were you? Let's see, shall we?
