 NYCNOSH's MIND-BLOWING HOMEMADE LATKE RECIPE
2 3/4 lbs. peeled white potatoes 1 lg onion 2 eggs, well beaten 1.5 Tbs matzoh meal 1/2 tsp salt 1/4 tsp black pepper
Take half of the peeled potatoes and cut them into one-inch chunks. Boil the cut up potatoes in salted water until tender - about 20 minutes. Drain, and then run the boiled potatoes through a food processor until smooth. Sprinkle matzoh meal on top of puree.
Shred the onion and remaining peeled potatoes into a large bowl and toss until well mixed. Place shredded vegetables into a piece of cheesecloth and twist until all the liquid has been extracted from the mixture. Put the squeezed vegetables into a large bowl and then thoroughly mix in the beaten eggs, and salt and pepper. Add the puréed potatoes and mix together to form a batter.
Heat 1/4-1/2" inch of corn oil in a pan (don't use olive oil!) to med-high. Form palm-sized patties about 1/2-3/4" high. Fry each patty on one side for about 5 min, then fry on the other side for 2 min. or until a dark golden brown. If the patties darken too quickly, or become dark brown, your oil is too hot. Serve with applesauce and sour cream. Makes about 10 latkes.

Paul D. asks: What is your most memorable moment from the recent Sid N Susie tour? All of the shows were fun and interesting - the atmosphere was relaxed and spontaneous, like a concert in your living room.
It's hard to pick a most memorable moment from the tour, but I would say listening and dancing to Leonard Bernstein's West Side Story music in the dressing room has been massively enjoyable - spontaneous improvisational dance/choreography has become a popular dressing room activity for me on the Sid and Susie tours...
...Matthew would like to incorporate the dance moves into our act at some point soon. ;)

Nancy M. asks: What the heck are you using as a facial regimen? Please tell because whatever it is, it is working!!! It changes all the time as I am always experimenting with new products, but over the years some of my tried and true basics are: Neutrogena Oil Free Moisture for Sensitive Skin (with SPF 15 for day), Clinique Repairwear Intensive Eye Cream, and Cetaphil Gentle Skin Cleanser Eye Contour Gel (only when I really need it!)
...And a couple of new favorites are from my friend Lisa Hoffman's skin care line - Vitamin A and C Serum for night, and Day Cream SPF for day. |
